WHere is a simplified version of a drink found on the seasonal menu. Designed as a batch pre-mixed that's bursting with the essence associated with holiday season, which makes it perfect for a holiday party. Save the extra cordial for brunch beverages, sweets, or to make additional servings of this cocktail.
The Bikini Cocktail
Yields 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Drink (yields 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
To prepare the Syrup: Put every components inside a pot, bring to a simmer, mixing to dissolve. After that, remove from the burner allowing it to cool fully. Decant into a sterilised bottle, seal and refrigerate it in the fridge, where it will keep for around one month.
To make Premix: Combine every spirits and syrup into a sizeable container, allow it to infuse for an hour, then filter it , ideally through cheesecloth, so it's perfectly clear.
To serve: Pour 85ml from the premix to a cocktail shaker packed with ice, and stir gently for one minute until cold. Pour to a cold coupe glass or equivalent, garnish with a few cranberries and finish using a quick spritz with the mandarin essence over the drink.
